One of the nicest things to do on a rainy afternoon is to bake bread and while not many of us have the luxury of a huge chunk of time within which to bake, some breads can be done in about an hours time and thats from the mixing to the kneading to the rising and the baking.
Quick Rolls
(Makes 16)
3 3-1/2 cups flour
2 tablespoons sugar
1-1/2 tsp. yeast
1-1/2 tsp. salt
2 eggs
1 cup warm water
2 tablespoons vegetable oil
Grease 9 round cake pan. Mix flour, sugar, yeast and salt in large bowl. Separate 1 egg and set the white aside. Mix the yolk, the other egg, hot water and oil in another bowl and add to flour mixture. Mix until smooth, turn out onto lightly floured surface and knead till elastic. Knead in additional flour sparingly if necessary. Cover dough with bowl and let rest 15 minutes. Then divide into 16 pieces and arrange in greased cake pan. Beat reserved egg white till foamy and brush over rolls. Place pan on shelf in center of oven. Place bowl filled with very hot water on the bottom of the oven, close door and let the dough rise about 25 minutes. After the rising, take out the bowl of hot water and the risen dough, cover it; heat the oven to 350 degrees centigrade and bake rolls about 20 minutes.
I sometimes fill some of the rolls with a piece of chocolate that melts as the rolls bake super delicious warm from the oven. I know its calorie-dense but its one of my comfort foods and is a great once-in-a-while treat.
